Here is my virtual birthday cake for Anna : the latest highlight of my pâtisserie class - the famous French Tarte Bourdaloue, created by a pâtissier who had his pastry shop in the rue Bourdaloue in Paris. His grandson also became a pâtissier some years ago. I let you guess to which school he went !!!
I think I will call it from now on Tarte Anna, as I worked on it while Anna was trying to get into this world. So this is how you get to this easy and quick but heavenly tasty tarte. So far my favorite from all the pâtisserie classes.
Poires pochées
Ideally the night before the birthday to celebrate, poach the pears in syrup. Adjust with vanilla bean or other spices that would match the birthday girl's / boy's taste. Leave the pears in syrup over night.
On the birthday prepare a pâte sucrée, and put (foncer) into a tart ring. (Sorry, but the way I did the beautiful edge remains a professional secret...).
Add crème d'amande on the tarte. Crème d'amande is a very yummy mix of almond powder, butter, eggs, sugar and rum. Amount of rum depending on age of birthday girl / boy. Try to not eat all the crème before it is put on the tarte, or alternatively make double quantity.
Cut pears in half, then in slices, arrange on the crème.
Put at 180°C in the oven. Wrap birthday gifts. Count candles. 40 minutes later take out of the oven, when color like this :

Decorate with sucre glacé. Call birthday boy / girl and guests. Sing. Hug birthday boy / girl. Taste tarte. Hug patissier(e).

We are visiting Paris for a month, from mid June to mid July. Where is the best place in Paris to enjoy these wonderful tartes bourdaloue? Does the old pastry shop on Rue Bourdaloue still exist? Who makes the best ones, please?
