Paris-Brest

Paris-Brest is another one of those delicious traditional French pastries...

This cake's history is linked to a 1200-kilometer bicycling event "Paris-Brest-Paris", also called "PBP", organized every four years since 1891. Beginning on the southern side of the French capital, it travels west 600 kilometers to the port city of Brest on the Atlantic Ocean and returns along the same route. A very clever pastry chef with his pastry shop along the route of this race, had the idea to create an overdimensioned éclair in the shape of a bicycle wheel to honor the cyclists and obviously also to gain some awareness for his pastry shop ! Good marketing job!

Therfore I dedicate this post to an "old" friend who still gets a thrill riding his bicyles. How about participating then in the next Paris-Brest-Paris ? It will take place in August 2007. I read that "No longer a contest for professional racing cyclists (whose entry is now forbidden), PBP evolved into a timed randonnée or brevet for hard-riding amateurs". Sounds like it's made for you (if you really like to push yourself), and don't tell me you are 2 old 2 try that...

Before you start : make sure you check your brakes as usual, they might need maintenance. Then off you go for the following checkpoints :

Km 0 (Paris) :
- get ingredients for the pâte à choux
(1/4 l water, 4g salt, 125g butter, 150g flower, 4 eggs)
- bring water+salt+butter to boil

Km 141 (Mortagne au Perche) :
- add flower, mix, dry
- add eggs one by one

Km 223 (Villaines La Juhel) :
- put circles in shape of your bike's wheel on baking sheet
(3 overlapping, one single (spare wheel)), cover with almonds
- put in oven at 200º C during 88 Km.

Km 311 (Fougeres) :
- while wheels rise in oven, prepare crème Paris-Brest :
- start with a normal crème Pâtissiere
(500g milk, 100g eggs, 50g sugar, 60g creme powder)

Km 452 (Loudéac) :
- mix egg yolks, sugar and creme powder
- mix with boiling milk, and stir until thick consistency (result = crème pâtissière)

Km 529 (Carhaix-Plouguer) :
- mix crème pâtissière with 200g praliné and 400g butter in kitchen machine
- cut bike wheel in 2

Km 604 (Brest) :
- fill spare wheel with crème chantilly
- enjoy the ocean

Km 696 (Carhaix) :
- decorate bottom of half bike wheel with crème Paris-Brest

Km 773(Loudéac) :
- add spare wheel on top

Km 859 (Titeniac) :
- decorate with crème Paris-Brest

Km 914 (Fougeres) :
- put upper half of bike wheel

Km 1002 (Villaines La Juhel) :
- decorate with sucre glace

Km 1232 (Paris) :
- be proud you've made it, get off the bike, get a massage, enjoy the cake, sleep. (or any other order).
